Spring Mix Salad is the perfect easy side dish if you buy those big tubs of Spring Mix greens and have a hard time using them! This is a kicked-up salad using my friend Mary’s perfect dressing for spring mix greens, plus Feta and pine nuts.

Spring Mix Salad is the way I turn those spring mix greens that come in a big tub at Costco into a salad that’s good enough to serve to guests! This is a recipe that was inspired by my friend Mary’s Perfect Easy Dressing that helped me become friends with those tubs of Spring Mix Salad you see in every grocery store. And now I love Spring Mix Greens when they’re just served with that dressing.

But when I have time to do more than splash on some olive oil, lime juice, and red wine vinegar, this Spring Mix Salad recipe really bumps up the greens into a tasty salad! And this is seriously good; I could eat this for lunch or dinner most any time of year without feeling deprived, because FETA and PINE NUTS!

Of course the variations are endless, but if you like both Feta and Pine Nuts I hope you’ll try my favorite combination at least once. And if you find another variation of a salad with Mary’s dressing that really helps you eat more salad, please come back and tell us about it in the comments.

What ingredients do you need?

  • Olive Oil (affiliate link), use good quality extra virgin olive oil for best flavor.
  • fresh-squeezed lime juice, I used my fresh-frozen lime juice
  • Red Wine Vinegar (affiliate link)
  • Spring Mix salad greens
  • crumbled Feta
  • Pine Nuts (affiliate link), 
  • salt and fresh-ground black pepper to taste

Spring Mix is a salad greens mix sold in U.S. grocery stores. Ingredients can vary, but it always contains some baby greens, which may be why it has the word spring in the name!

Can you make Spring Mix Salad without Pine Nuts?

I’m aware that pine nuts are a budget splurge, but I love them so much that I buy the big bags at Costco and store them in the freezer. That makes them a lot more affordable, but if that’s just not happening for you I think slivered almonds, pecans, walnuts, or even sunflower seeds will all be delicious in this salad.

Can you make this salad recipe with other lettuce blends?

Spring Mix lettuce mix is common in U.S. grocery stores, but most stores also sell other lettuce blends that have more of certain types of greens like spinach, kale, or arugula. Any of those lettuce blends will also be great in this type of salad if you’re not a fan of the basic Spring mix.

How to make Spring Mix Salad:

  1. Crisp greens in ice cold water in a salad spinner (affiliate link) while you prep other ingredients if desired. Spin and let dry very well. (Greens that are really fresh won’t need this step.)
  2. You can skip toasting the pine nuts if you want, but it only takes a second and it adds flavor.
  3. Whisk together olive oil, lime juice, and red wine vinegar to make the dressing.
  4. Crumble the Feta cheese.
  5. Put lettuce in a bowl, toss with dressing, add pine nuts and Feta, season with a little salt and fresh-ground black pepper and toss again, then devour!
  6. And if you’re using this recipe as part of a dinner for guests, serve the salad in a nice glass bowl and no one will ever guess it only took you minutes to make it!

More Kicked-Up Leafy Green Salads:

Instructions

  1. Spring mix salad doesn’t usually need to be washed, but if you’re using greens from the garden or want to crisp the greens more you’ll need to wash them, preferably in a salad spinner (affiliate link). I like to pull off the prickly stems of the bigger leaves, but that’s totally optional!
  2. Whisk together olive oil, the lime juice, and the red wine vinegar. Taste the dressing and see if it seems too tart to you; if so add more olive oil a little at a time until you like the flavor.
  3. If you want to toast pine nuts, put them in a dry pan over high heat and toast 1 minute (or a little longer), shaking the pan the whole time. They get too done pretty quickly so turn off the heat before they start to get brown.
  4. Put the greens in a mixing bowl and toss with enough dressing to coat the greens. Add the Feta and pine nuts and toss again.
  5. Season to taste with salt and fresh-ground black pepper and toss again; then serve right away.
